A comforting slow-cooker meal that blends tender chicken, rich garlic, and creamy Parmesan for an easy weeknight dinner.
Ingredients
- 2 boneless, skinless chicken breasts
- 8 oz fettuccine pasta
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 4 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Place the chicken breasts at the bottom of your crockpot.
- In a mixing bowl, combine the chicken broth, heavy cream, minced garlic, salt, and pepper. Pour this mixture over the chicken.
- Cover and cook on low for 4-6 hours, or until the chicken is fork-tender.
- About 30 minutes before you’re ready to serve, add the fettuccine and Parmesan cheese into the crockpot. Stir to combine and let it cook until the pasta softens.
- Once the chicken is tender, shred it using two forks and mix with the pasta and sauce.
- Serve warm, garnishing with freshly chopped parsley.
Notes
For a thicker sauce, let it cook longer after adding the fettuccine or add a cornstarch slurry. Consider adding steamed broccoli or spinach for added nutrition.
