A comforting slow-cooker meal that blends tender chicken, rich garlic, and creamy Parmesan for an easy weeknight dinner.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 8 oz fettuccine pasta
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Place the chicken breasts at the bottom of your crockpot.
  2. In a mixing bowl, combine the chicken broth, heavy cream, minced garlic, salt, and pepper. Pour this mixture over the chicken.
  3. Cover and cook on low for 4-6 hours, or until the chicken is fork-tender.
  4. About 30 minutes before you’re ready to serve, add the fettuccine and Parmesan cheese into the crockpot. Stir to combine and let it cook until the pasta softens.
  5. Once the chicken is tender, shred it using two forks and mix with the pasta and sauce.
  6. Serve warm, garnishing with freshly chopped parsley.

Notes

For a thicker sauce, let it cook longer after adding the fettuccine or add a cornstarch slurry. Consider adding steamed broccoli or spinach for added nutrition.
