Ingredients
- 1 ripe avocado
- 2 slices of bread (sourdough or whole grain recommended)
- 1 cup cottage cheese
- 1 tablespoon honey
- 1 teaspoon Everything Bagel seasoning
- 1 tablespoon fresh lemon juice
- Salt and pepper to taste
Instructions
- Toast two slices of bread until they’re golden and crisp to your preference.
- Halve and pit the avocado. In a small bowl, mash the flesh with the lemon juice, a pinch of salt, and a grind of black pepper until mostly smooth but still a little chunky.
- Spread the mashed avocado evenly over each warm slice of toast.
- Spoon about half a cup of cottage cheese onto each avocado-topped slice and gently spread.
- Drizzle each piece with honey, then finish with a sprinkle of Everything Bagel seasoning.
- Serve immediately and enjoy the contrast of warm toast, cool cottage cheese, and creamy avocado.
Notes
Use full-fat cottage cheese for creamier texture. If you prefer a nutty base, swap sourdough for a seeded whole-grain loaf.
