Ingredients
- Chicken pieces (breasts, thighs, or a combination)
- Olive oil
- Salt and pepper
- Garlic, minced
- Onion, chopped
- Bell peppers, sliced (colorful varieties are best)
- Canned tomatoes (diced or crushed)
- Chicken broth
- Your choice of herbs (like basil and oregano)
- Optional: A splash of wine for depth
Instructions
- Season the chicken pieces generously with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Add the chicken and sear until browned on both sides, about 4-5 minutes per side. Remove and set aside.
- In the same skillet, add the chopped onions and minced garlic. Sauté until the onions become translucent.
- Toss in the bell peppers and cook until they soften.
- Stir in the canned tomatoes and chicken broth. If using wine, add it now.
- Return the chicken to the skillet, nestling it into the mixture.
- Sprinkle the herbs over everything, cover, and reduce the heat. Simmer for about 25-30 minutes until the chicken is cooked through.
- Check seasoning, adding salt or pepper if needed.
- Serve hot and enjoy!
Notes
Searing the chicken adds depth to the flavor. Feel free to use boneless chicken to save on cooking time. Adjust the spice level by adding red pepper flakes if you like a kick.
