Ingredients

  • 8 bone-in, skin-on chicken thighs (about 2 lbs)
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder (optional)
  • 2 tbsp unsalted butter
  • 6 cloves garlic, minced
  • 1/2 cup low-sodium chicken broth
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped (for garnish)


Instructions

  1. Pat the chicken thighs dry and season with salt, pepper, and garlic powder.
  2. Heat olive oil in a large skillet and sear chicken thighs skin-side down for 6–8 minutes until golden brown.
  3. Flip the thighs and cook for another 5–6 minutes until cooked through. Remove and rest.
  4. Add butter to the skillet, melt, and cook minced garlic for 30 seconds.
  5. Deglaze with chicken broth, simmer for 3–4 minutes.
  6. Stir in heavy cream and Parmesan, simmer until thickened.
  7. Return chicken to skillet and spoon sauce over top, garnish with parsley, and serve.

Notes

For a lighter sauce, use half-and-half. For dairy-free, substitute with full-fat coconut milk and nutritional yeast. Boneless thighs can be used with slightly reduced cooking times.
