Description

A nostalgic, no-bake ambrosia salad made with fruit, marshmallows, and coconut, perfect for Easter gatherings.


Ingredients

  • 1 (8 oz) container of Cool Whip
  • 1 cup mini marshmallows
  • 1 can (15 oz) mandarin oranges, drained
  • 1 can (20 oz) crushed pineapple, drained
  • 1 cup shredded coconut
  • 1 cup maraschino cherries, halved
  • 1 cup diced fruit (such as grapes or apples)
  • 1/2 cup chopped nuts (optional)


Instructions

  1. Drain the mandarin oranges and crushed pineapple thoroughly. Pat the pineapple if it’s very juicy.
  2. In a large bowl, add the Cool Whip.
  3. Fold in the mini marshmallows.
  4. Gently mix in the drained mandarin oranges and crushed pineapple.
  5. Add the shredded coconut, halved maraschino cherries, and the diced fruit.
  6. If using, stir in the chopped nuts last so they keep some texture.
  7. Cover the bowl tightly and refrigerate for at least 1 hour to let flavors meld and marshmallows soften.
  8. Give it a gentle stir before serving and portion into bowls or individual cups.

Notes

For a lighter version, try plain or vanilla Greek yogurt in place of Cool Whip. If using apples, toss them with a little lemon juice to reduce browning. Swap grapes for diced pears or seedless melon for seasonal variety.
