Description
A nostalgic, no-bake ambrosia salad made with fruit, marshmallows, and coconut, perfect for Easter gatherings.
Ingredients
- 1 (8 oz) container of Cool Whip
- 1 cup mini marshmallows
- 1 can (15 oz) mandarin oranges, drained
- 1 can (20 oz) crushed pineapple, drained
- 1 cup shredded coconut
- 1 cup maraschino cherries, halved
- 1 cup diced fruit (such as grapes or apples)
- 1/2 cup chopped nuts (optional)
Instructions
- Drain the mandarin oranges and crushed pineapple thoroughly. Pat the pineapple if it’s very juicy.
- In a large bowl, add the Cool Whip.
- Fold in the mini marshmallows.
- Gently mix in the drained mandarin oranges and crushed pineapple.
- Add the shredded coconut, halved maraschino cherries, and the diced fruit.
- If using, stir in the chopped nuts last so they keep some texture.
- Cover the bowl tightly and refrigerate for at least 1 hour to let flavors meld and marshmallows soften.
- Give it a gentle stir before serving and portion into bowls or individual cups.
Notes
For a lighter version, try plain or vanilla Greek yogurt in place of Cool Whip. If using apples, toss them with a little lemon juice to reduce browning. Swap grapes for diced pears or seedless melon for seasonal variety.
