Ingredients
- 1 lb ground beef or turkey (lean options work best)
- 1 onion, chopped
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (15 oz) diced tomatoes with green chilies
- 1 packet taco seasoning
- 4 cups beef or chicken broth
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, chopped green onions
Instructions
- Brown the ground beef or turkey in a large pot with the chopped onion over medium heat for 5-7 minutes.
- Drain any excess fat.
- Add the black beans, corn, diced tomatoes, taco seasoning, and broth to the pot. Stir to combine.
- Increase the heat to bring the soup to a boil, then reduce to a simmer for about 20 minutes.
- Season with salt and pepper to taste.
- Serve hot, topping each bowl with desired toppings.
Notes
For a vegetarian version, substitute ground meat with lentils or chickpeas. Taco soup is great for meal prep and can be refrigerated for 3-4 days or frozen for 2-3 months.
