Description

A comforting and hearty taco soup that combines delicious flavors and is quick to prepare, making it perfect for busy weeknights.


Ingredients

  • 1 lb ground beef or turkey (lean options work best)
  • 1 onion, chopped
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 4 cups beef or chicken broth
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped green onions


Instructions

  1. Brown the ground beef or turkey in a large pot with the chopped onion over medium heat for 5-7 minutes.
  2. Drain any excess fat.
  3. Add the black beans, corn, diced tomatoes, taco seasoning, and broth to the pot. Stir to combine.
  4. Increase the heat to bring the soup to a boil, then reduce to a simmer for about 20 minutes.
  5. Season with salt and pepper to taste.
  6. Serve hot, topping each bowl with desired toppings.

Notes

For a vegetarian version, substitute ground meat with lentils or chickpeas. Taco soup is great for meal prep and can be refrigerated for 3-4 days or frozen for 2-3 months.
