Ingredients
- 2 cups cucumber, thinly sliced
- 2 cups carrots, grated
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- 1 teaspoon honey
- Salt and pepper to taste
Instructions
- In a large bowl, combine the cucumber, carrots, red onion, and parsley.
- In a small mixing bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper until well combined.
- Drizzle the dressing over the salad mixture and toss gently to coat all the vegetables evenly.
