A delightful dish that blends pasta with the robust flavors of tacos, perfect for busy weeknights or gatherings.
Ingredients
- 1 lb ground beef
- 1 packet taco seasoning
- 2 cups pasta (elbow or shell)
- 3 cups water or beef broth
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 can diced tomatoes with green chilies (optional)
- Salt and pepper to taste
- Optional toppings: sour cream, chopped green onions, cilantro
Instructions
- In a large crockpot, brown the ground beef and drain any excess fat.
- Add taco seasoning, cooked pasta, water or broth, and diced tomatoes (if using). Stir to combine.
- Cover and cook on low for 4-6 hours or until the pasta is tender.
- In the last 15 minutes of cooking, stir in the cheese until melted.
- Serve hot, topped with optional toppings.
Notes
Leftovers store well in the refrigerator for up to three days. Freeze for up to three months. Enhance flavor with diced onions and bell peppers or add cream cheese for a creamier texture.
