Description

A comforting and creamy potato soup made effortlessly in a crockpot, perfect for family dinners and gatherings.


Ingredients

  • 6 medium potatoes, peeled and diced
  • 1 onion, chopped
  • 3 carrots, diced
  • 3 celery stalks, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika


Instructions

  1. Add the diced potatoes, chopped onion, carrots, celery, and minced garlic to the crockpot.
  2. Pour in the broth and season with thyme, paprika, salt, and pepper.
  3. Cover and set it to cook on low for 6-8 hours or high for about 4 hours, until the vegetables are nice and tender.
  4. About 30 minutes before serving, stir in the heavy cream to make it wonderfully creamy.
  5. Taste and adjust the seasoning if needed, then serve warm.

Notes

For a thicker consistency, mash some of the potatoes before adding the cream. Fresh ingredients are recommended for the best flavor.
