A comforting and creamy potato soup made effortlessly in a crockpot, perfect for family dinners and gatherings.
Ingredients
- 6 medium potatoes, peeled and diced
- 1 onion, chopped
- 3 carrots, diced
- 3 celery stalks, diced
- 2 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- 1 teaspoon dried thyme
- 1 teaspoon paprika
Instructions
- Add the diced potatoes, chopped onion, carrots, celery, and minced garlic to the crockpot.
- Pour in the broth and season with thyme, paprika, salt, and pepper.
- Cover and set it to cook on low for 6-8 hours or high for about 4 hours, until the vegetables are nice and tender.
- About 30 minutes before serving, stir in the heavy cream to make it wonderfully creamy.
- Taste and adjust the seasoning if needed, then serve warm.
Notes
For a thicker consistency, mash some of the potatoes before adding the cream. Fresh ingredients are recommended for the best flavor.
