Description

A comforting and zesty chicken soup made in a crockpot, perfect for any occasion, especially on cold days.


Ingredients

  • 2 cups shredded chicken
  • 1 cup rice or orzo
  • 4 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 lemon, juiced
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Place the shredded chicken, rice or orzo, chicken broth, diced carrots, celery, chopped onion, minced garlic, thyme, oregano, and salt and pepper into the crockpot.
  2. Pour in the freshly squeezed lemon juice.
  3. Cover and set the crockpot on low for 6-8 hours, or on high for 3-4 hours, until the vegetables are tender.
  4. Serve hot, garnished with fresh parsley.

Notes

For a richer flavor, sauté the onions, garlic, and carrots for a few minutes before adding them to the crockpot. You can also add heavy cream or coconut milk for a creamier texture.
