Description
A comforting and zesty chicken soup made in a crockpot, perfect for any occasion, especially on cold days.
Ingredients
- 2 cups shredded chicken
- 1 cup rice or orzo
- 4 cups chicken broth
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 lemon, juiced
- 1 tsp dried thyme
- 1 tsp dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Place the shredded chicken, rice or orzo, chicken broth, diced carrots, celery, chopped onion, minced garlic, thyme, oregano, and salt and pepper into the crockpot.
- Pour in the freshly squeezed lemon juice.
- Cover and set the crockpot on low for 6-8 hours, or on high for 3-4 hours, until the vegetables are tender.
- Serve hot, garnished with fresh parsley.
Notes
For a richer flavor, sauté the onions, garlic, and carrots for a few minutes before adding them to the crockpot. You can also add heavy cream or coconut milk for a creamier texture.
