Description

A tropical and comforting dish combining rich coconut milk and zesty lime, prepared effortlessly in a slow cooker.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 can (13.5 oz) coconut milk
  • 1/4 cup lime juice
  • 1 tablespoon lime zest
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh cilantro for garnish
  • Jasmine rice for serving


Instructions

  1. Place the chicken breasts in the slow cooker.
  2. In a medium bowl, whisk together coconut milk, lime juice, lime zest, garlic powder, onion powder, salt, and black pepper until well combined.
  3. Pour the mixture over the chicken, ensuring it’s evenly coated.
  4. Cover and set the slow cooker to low, cooking for 6-7 hours until the chicken is fork-tender.
  5. Once done, shred the chicken with two forks and mix it well with the sauce.
  6. Serve over jasmine rice and garnish with fresh cilantro.

Notes

For a thicker sauce, whisk in a tablespoon of cornstarch mixed with water towards the end of the cooking time.
