Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 packet taco seasoning
  • Salt and pepper to taste
  • Tortilla strips for garnish
  • Fresh cilantro for garnish
  • Lime wedges for serving


Instructions

  1. Place the chicken breasts at the bottom of the crockpot.
  2. Add in the black beans, corn, diced tomatoes, onion, garlic, chicken broth, and taco seasoning.
  3. Stir to combine, then season with salt and pepper.
  4. Cover and cook on low for 6-8 hours or high for 4 hours.
  5. About 30 minutes before serving, shred the chicken right in the crockpot.
  6. Serve hot, garnished with tortilla strips, cilantro, and lime juice.
