Ingredients
- 1 lb boneless, skinless chicken breasts
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 packet taco seasoning
- Salt and pepper to taste
- Tortilla strips for garnish
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions
- Place the chicken breasts at the bottom of the crockpot.
- Add in the black beans, corn, diced tomatoes, onion, garlic, chicken broth, and taco seasoning.
- Stir to combine, then season with salt and pepper.
- Cover and cook on low for 6-8 hours or high for 4 hours.
- About 30 minutes before serving, shred the chicken right in the crockpot.
- Serve hot, garnished with tortilla strips, cilantro, and lime juice.
