Description

A creamy and comforting crockpot cheeseburger soup that brings the flavors of traditional cheeseburgers into a hearty dish.


Ingredients

  • 1 lb ground beef
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 3 medium potatoes, diced
  • 2 cups shredded carrots
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Optional toppings: diced pickles, bacon bits, chopped green onions


Instructions

  1. Brown the ground beef with the diced onion and minced garlic in a skillet over medium heat. Drain excess grease.
  2. Transfer the beef mixture into the crockpot.
  3. Pour in the beef broth, followed by the diced potatoes and shredded carrots.
  4. Cover the crockpot and cook on low for 6-8 hours or high for 3-4 hours.
  5. About 30 minutes before serving, stir in the milk and shredded cheddar cheese until melted and combined.
  6. Season with salt and pepper according to taste.
  7. Serve warm, adding optional toppings as desired.

Notes

For extra flavor, add Worcestershire sauce or mustard when cooking the beef. A cornstarch slurry can be added for a thicker soup.
