A creamy and comforting crockpot cheeseburger soup that brings the flavors of traditional cheeseburgers into a hearty dish.
Ingredients
- 1 lb ground beef
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 3 medium potatoes, diced
- 2 cups shredded carrots
- 1 cup milk
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- Optional toppings: diced pickles, bacon bits, chopped green onions
Instructions
- Brown the ground beef with the diced onion and minced garlic in a skillet over medium heat. Drain excess grease.
- Transfer the beef mixture into the crockpot.
- Pour in the beef broth, followed by the diced potatoes and shredded carrots.
- Cover the crockpot and cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, stir in the milk and shredded cheddar cheese until melted and combined.
- Season with salt and pepper according to taste.
- Serve warm, adding optional toppings as desired.
Notes
For extra flavor, add Worcestershire sauce or mustard when cooking the beef. A cornstarch slurry can be added for a thicker soup.
