Ingredients
- 1 pound boneless, skinless chicken breasts
- 1 can (14.5 ounces) diced tomatoes
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste

Instructions
- Place the chicken breasts in your crock pot.
- Add diced tomatoes, chicken broth, minced garlic, dried basil, oregano, salt, and pepper on top of the chicken.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is thoroughly cooked and tender.
- Once cooked, shred the chicken using two forks and stir in the heavy cream along with the freshly grated Parmesan cheese.
- Let it cook for an additional 30 minutes, allowing the soup to heat through and develop that creamy texture.
- Serve over cooked pasta if desired, and add a sprinkle of fresh basil for garnish.
