Description
A quick and lighter twist on classic chicken Parmesan with a crispy air-fried crust and melted cheese.
Ingredients
- 2 boneless, skinless chicken breasts
- 1 cup breadcrumbs (Panko for extra crunch)
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1 egg
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- Salt and pepper to taste
- Olive oil spray
Instructions
- Preheat the air fryer to 380°F (193°C).
- In a bowl, combine the breadcrumbs, grated Parmesan, garlic powder, Italian seasoning, salt, and pepper. Mix well.
- Beat the egg in a separate bowl until smooth.
- Dip each chicken breast into the beaten egg, coating completely.
- Press the chicken into the breadcrumb mixture, ensuring all sides are well coated.
- Lightly spray the air fryer basket with olive oil and place the chicken breasts in a single layer.
- Spray the tops with olive oil and air-fry for 10–12 minutes, flipping halfway, until golden and cooked through (internal temp 165°F/74°C).
- Spoon 1/2 cup marinara over each breast and sprinkle with shredded mozzarella. Air-fry again for 2–3 minutes until cheese melts.
- Remove and let rest for 2 minutes before serving.
Notes
For even cooking, pound thick chicken breasts to 1/2–3/4 inch. Can use gluten-free breadcrumbs for a gluten-free option.
