Description

A delightful one-pan pasta dish combining creamy sauce and fresh tomatoes, perfect for quick weeknight dinners.


Ingredients

  • 8 oz spaghetti or fettuccine
  • 1 cup ripe tomatoes (diced)
  • 1 cup heavy cream
  • 4 cloves fresh garlic (minced)
  • 2 tbsp extra virgin olive oil
  • 1/4 cup fresh basil (chopped)
  • Salt and pepper to taste


Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until golden brown.
  3. Add diced tomatoes, salt, and pepper. Simmer for about 5 minutes.
  4. Lower the heat and stir in the heavy cream until well blended and smooth.
  5. Toss in the cooked pasta until evenly coated with the sauce.
  6. Serve topped with fresh basil and grated Parmesan cheese, if desired.
