Ingredients
- 1 lb Ground Beef (or turkey or a plant-based protein)
- 1 large Onion
- 3 cloves Garlic (minced)
- 4 cups Beef Broth (or vegetable broth)
- 14.5 oz Diced Tomatoes (canned, with juice)
- 1 cup Corn (canned or frozen)
- 15 oz Black Beans (drained and rinsed)
- 2 medium Potatoes (diced)
- 1 tbsp Smoked Paprika
- 1 tbsp Chili Powder
- 1 tsp Cumin
- 1 tsp Salt
- 0.5 tsp Black Pepper
- 1 cup Heavy Cream (or coconut milk)
- 1 cup Shredded Cheddar Cheese
Instructions
- Brown the ground beef in a large pot over medium heat for about 5-7 minutes.
- Add the diced onion and minced garlic; sauté for 3-4 minutes until the onion is translucent.
- Stir in the diced potatoes, corn, black beans, diced tomatoes with juice, and the broth; bring to a boil.
- Reduce the heat to low, add spices, and let it simmer for 20-25 minutes until the potatoes are tender.
- Stir in the heavy cream and shredded cheddar cheese until melted and fully combined.
- Taste and adjust seasonings. Serve hot, garnishing as desired.
