A warm and inviting bowl of creamy cowboy soup, perfect for busy weeknights and lazy weekends.


Ingredients

  • 1 lb Ground Beef (or turkey or a plant-based protein)
  • 1 large Onion
  • 3 cloves Garlic (minced)
  • 4 cups Beef Broth (or vegetable broth)
  • 14.5 oz Diced Tomatoes (canned, with juice)
  • 1 cup Corn (canned or frozen)
  • 15 oz Black Beans (drained and rinsed)
  • 2 medium Potatoes (diced)
  • 1 tbsp Smoked Paprika
  • 1 tbsp Chili Powder
  • 1 tsp Cumin
  • 1 tsp Salt
  • 0.5 tsp Black Pepper
  • 1 cup Heavy Cream (or coconut milk)
  • 1 cup Shredded Cheddar Cheese


Instructions

  1. Brown the ground beef in a large pot over medium heat for about 5-7 minutes.
  2. Add the diced onion and minced garlic; sauté for 3-4 minutes until the onion is translucent.
  3. Stir in the diced potatoes, corn, black beans, diced tomatoes with juice, and the broth; bring to a boil.
  4. Reduce the heat to low, add spices, and let it simmer for 20-25 minutes until the potatoes are tender.
  5. Stir in the heavy cream and shredded cheddar cheese until melted and fully combined.
  6. Taste and adjust seasonings. Serve hot, garnishing as desired.
