Description
Quick and protein-packed cottage cheese flatbreads that are tender and perfect for stuffing or serving alongside a salad.
Ingredients
- 1 cup cottage cheese
- 2 cups all-purpose flour (or half whole wheat)
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 cup olive oil (plus more for cooking)
- 1/4 cup water (add more if needed)
- Optional: chopped herbs (parsley, dill), garlic powder, za’atar
Instructions
- In a mixing bowl, combine the cottage cheese, flour, baking powder, and salt. Mix until dry ingredients come together.
- Add olive oil and water; stir until a shaggy dough forms.
- Turn onto a floured surface and knead gently for 2–3 minutes until smooth.
- Divide the dough into 6–8 equal pieces and roll into balls. Let rest under a towel for 5 minutes.
- Flatten each ball into a thin round using a rolling pin.
- Heat a skillet over medium heat. Cook each flatbread for 2–3 minutes per side until golden-brown.
Notes
For a gluten-free version, use a 1:1 gluten-free flour blend. Store cooked flatbreads in an airtight container for up to 4 days.
