Description
A comforting and quick ginger garlic chicken noodle soup that is perfect for chilly days or when you’re feeling under the weather.
Ingredients
- 2 boneless, skinless chicken breasts
- 4 cups chicken broth
- 1 cup noodles (egg noodles or rice noodles)
- 1 tablespoon fresh ginger, minced
- 3 cloves garlic, minced
- 1 medium onion, chopped
- 2 carrots, sliced
- 2 stalks celery, sliced
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- In a large pot, heat a drizzle of oil over medium heat. Add the onions, garlic, and ginger, and sauté until fragrant.
- Toss in the sliced carrots and celery, cooking until they become tender.
- Pour in the chicken broth and bring everything to a gentle boil.
- Add in the chicken breasts and noodles. Cook until the chicken is fully cooked through, around 10-15 minutes, and the noodles are tender.
- Remove the chicken from the pot, shred it with two forks, and return the chicken back to the soup.
- Season with salt and pepper to taste. Serve hot, garnished with plenty of green onions for that fresh kick.
Notes
Feel free to experiment with substitutes like using vegetable broth for a vegetarian version or leftover rotisserie chicken to save time.
