Description

A warm, hearty beef stew that evokes memories of family dinners, perfect for chilly days.


Ingredients

  • 2 pounds beef stew meat, cut into 1-inch cubes
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste


Instructions

  1. Place the beef, carrots, potatoes, onion, and garlic in the slow cooker.
  2. In a separate bowl, mix together the beef broth, Worcestershire sauce, thyme, bay leaf, salt, and pepper.
  3. Pour the mixture over the meat and vegetables in the slow cooker.
  4. Cover and cook on low for about 480 minutes or on high for 240-300 minutes, until the meat is perfectly tender.
  5. Before serving, be sure to remove the bay leaf.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to three days. Freezes well for up to three months.
