Ingredients
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp ground cinnamon
- ½ tsp salt
- ½ cup unsalted butter, softened
- ½ cup granulated sugar
- ½ cup brown sugar, packed
- 1 large egg
- 2 tsp vanilla extract
- For the Filling:
- ½ cup brown sugar, packed
- 2 tsp ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, whisk together the flour, baking powder, salt, and cinnamon until well combined.
- Cream the softened butter along with granulated and brown sugars until fluffy and light in color.
- Beat in the egg and vanilla extract until smooth.
- Gradually add the dry ingredients to the butter mixture, stirring until just combined.
- Combine brown sugar and cinnamon for the filling in a small bowl.
- Spread half of the dough on parchment paper, sprinkle with the cinnamon filling, and roll it up tightly.
- Slice the rolled dough into rounds and place them on a parchment-lined baking sheet.
- Bake for 10-12 minutes, or until golden brown.
Notes
Best enjoyed fresh from the oven, and pairs well with coffee or tea. For added flavor, drizzle icing made with powdered sugar and milk on top.
