Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 large egg
  • 2 tsp vanilla extract
  • For the Filling:
  • ½ cup brown sugar, packed
  • 2 tsp ground cinnamon


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the flour, baking powder, salt, and cinnamon until well combined.
  3. Cream the softened butter along with granulated and brown sugars until fluffy and light in color.
  4. Beat in the egg and vanilla extract until smooth.
  5. Gradually add the dry ingredients to the butter mixture, stirring until just combined.
  6. Combine brown sugar and cinnamon for the filling in a small bowl.
  7. Spread half of the dough on parchment paper, sprinkle with the cinnamon filling, and roll it up tightly.
  8. Slice the rolled dough into rounds and place them on a parchment-lined baking sheet.
  9. Bake for 10-12 minutes, or until golden brown.

Notes

Best enjoyed fresh from the oven, and pairs well with coffee or tea. For added flavor, drizzle icing made with powdered sugar and milk on top.
