Description
Deliciously chewy and protein-packed bites made with cottage cheese, oats, and apples, perfect for a quick snack or breakfast.
Ingredients
- 1 cup cottage cheese
- 1 cup rolled oats
- 1/2 cup applesauce or 1 small grated apple
- 1 large egg
- 1/2 tsp ground cinnamon
- 1 tbsp honey or maple syrup (optional)
- 1/2 tsp baking powder
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C) and grease a mini muffin pan or line with mini muffin liners.
- In a mixing bowl, combine the cottage cheese, rolled oats, applesauce or grated apple, egg, cinnamon, honey or maple syrup (if using), baking powder, and a pinch of salt. Stir until well combined.
- Let the batter sit for 5 minutes so the oats absorb some moisture.
- Scoop the mixture evenly into the mini muffin pan, filling each cup almost to the top.
- Bake for 18–20 minutes, or until the bites are set and lightly golden on top.
- Cool the bites in the pan for a few minutes, then transfer them to a wire rack to cool completely.
- Enjoy warm, or store in the fridge for up to 4 days.
Notes
For smoother texture, briefly blend cottage cheese. Use Greek yogurt or ricotta instead for a variation. To make gluten-free, ensure oats are certified gluten-free.
