Ingredients

  • 4 chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves fresh garlic, minced
  • 1 tablespoon fresh herbs (thyme or rosemary)
  • 2 tablespoons lemon juice
  • Salt and pepper to taste


Instructions

  1. Marinate the chicken breasts in olive oil, minced garlic, fresh herbs, lemon juice, salt, and pepper for at least 30 minutes.
  2. Heat a skillet over medium-high heat and add a splash of olive oil.
  3. Add the marinated chicken to the skillet and sear for 5-7 minutes on each side until golden brown and cooked through.
  4. Remove the chicken from the skillet and set aside. Add any remaining marinade to the skillet and cook for another minute to create a sauce.
  5. Return the chicken to the skillet, spoon the sauce over it, and let it simmer for an additional 3-5 minutes.

Notes

Let the chicken rest for a few minutes before slicing to retain juices. Marinating overnight enhances the flavors.
