Ingredients
- 2 cups shredded cooked chicken
- 2 cups diced cooked turkey
- 1 medium onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 6 cups chicken broth
- 1 teaspoon dried thyme
- 1 tablespoon fresh parsley, chopped
- Salt and pepper to taste
Instructions
- In a large pot, heat a tablespoon of olive oil over medium heat.
- Add the diced onions, carrots, and celery, sautéing for about 5 minutes until they are soft.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Pour in the chicken broth and bring to a gentle simmer.
- Mix in the shredded chicken and turkey, allowing the soup to cook for 10-15 minutes to let the flavors meld.
- Season with thyme, parsley, salt, and pepper to taste.
