Description
A comforting Chicken and Turkey Soup combining tender meats in a rich broth, perfect for chilly evenings.
Ingredients
- 2 Chicken breasts or thighs
- 2 cups of shredded Turkey (leftovers or turkey breast)
- 2 Carrots, chopped
- 2 Celery stalks, chopped
- 1 Onion, chopped
- 3 Garlic cloves, minced
- 6 cups Chicken broth
- 2 teaspoons dried Thyme
- 2 Bay leaves
- Salt and pepper to taste
Instructions
- In a large pot, heat a little oil over medium heat. Add the chopped onion, garlic, carrots, and celery. Sauté until the vegetables are tender and fragrant, about 5 minutes.
- Add in the chicken and turkey, stirring occasionally.
- Pour in the chicken broth and bring the mixture to a boil.
- Reduce the heat and add in your herbs, seasoning with salt and pepper to taste.
- Let it simmer for about 30-40 minutes, or until the chicken is cooked through and tender.
- Remove the chicken, shred it, and return it to the pot.
- Adjust seasonings if needed, and enjoy!
Notes
For a richer flavor, consider using homemade broth. You can also add leafy greens or spices for a creative twist.
