Description

A comforting Chicken and Turkey Soup combining tender meats in a rich broth, perfect for chilly evenings.


Ingredients

  • 2 Chicken breasts or thighs
  • 2 cups of shredded Turkey (leftovers or turkey breast)
  • 2 Carrots, chopped
  • 2 Celery stalks, chopped
  • 1 Onion, chopped
  • 3 Garlic cloves, minced
  • 6 cups Chicken broth
  • 2 teaspoons dried Thyme
  • 2 Bay leaves
  • Salt and pepper to taste


Instructions

  1. In a large pot, heat a little oil over medium heat. Add the chopped onion, garlic, carrots, and celery. Sauté until the vegetables are tender and fragrant, about 5 minutes.
  2. Add in the chicken and turkey, stirring occasionally.
  3. Pour in the chicken broth and bring the mixture to a boil.
  4. Reduce the heat and add in your herbs, seasoning with salt and pepper to taste.
  5. Let it simmer for about 30-40 minutes, or until the chicken is cooked through and tender.
  6. Remove the chicken, shred it, and return it to the pot.
  7. Adjust seasonings if needed, and enjoy!

Notes

For a richer flavor, consider using homemade broth. You can also add leafy greens or spices for a creative twist.
