Ingredients
- 3-4 boneless, skinless chicken breasts
- Lo Mein noodles (fresh or dried)
- 1 red bell pepper
- 1 yellow bell pepper
- 2 carrots, thinly sliced
- 2 green onions, chopped
- ¼ cup low-sodium soy sauce
- 1 tablespoon sesame oil
- 3 cloves fresh minced garlic
Instructions
- Gather all your ingredients and chop the vegetables into bite-sized pieces.
- Cook lo mein noodles according to the package instructions until al dente; drain and set aside.
- Heat a large skillet or wok over medium-high heat. Add sesame oil and sauté the chicken until golden brown and fully cooked, about 6-8 minutes. Remove from the skillet.
- In the same skillet, stir-fry bell peppers, carrots, and green onions until tender but still crisp, around 3-4 minutes.
- Return cooked chicken to the skillet along with the veggies. Add the lo mein noodles, soy sauce, and minced garlic. Toss everything together until evenly mixed.
- Serve hot, with extra soy sauce on the side if desired.
Notes
Chop vegetables ahead of time to reduce cooking time. Adjust sauce and ingredients as per your taste.
