Ingredients

  • 3-4 boneless, skinless chicken breasts
  • Lo Mein noodles (fresh or dried)
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 2 carrots, thinly sliced
  • 2 green onions, chopped
  • ¼ cup low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves fresh minced garlic


Instructions

  1. Gather all your ingredients and chop the vegetables into bite-sized pieces.
  2. Cook lo mein noodles according to the package instructions until al dente; drain and set aside.
  3. Heat a large skillet or wok over medium-high heat. Add sesame oil and sauté the chicken until golden brown and fully cooked, about 6-8 minutes. Remove from the skillet.
  4. In the same skillet, stir-fry bell peppers, carrots, and green onions until tender but still crisp, around 3-4 minutes.
  5. Return cooked chicken to the skillet along with the veggies. Add the lo mein noodles, soy sauce, and minced garlic. Toss everything together until evenly mixed.
  6. Serve hot, with extra soy sauce on the side if desired.

Notes

Chop vegetables ahead of time to reduce cooking time. Adjust sauce and ingredients as per your taste.
