Ingredients

  • 2 slices of bread
  • 1 cup cooked chicken, shredded
  • 1 ripe avocado, mashed
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 tablespoon mayonnaise (optional)
  • Salt and pepper to taste
  • Butter for grilling


Instructions

  1. In a bowl, mix together the shredded chicken and mashed avocado. Add mayonnaise, salt, and pepper if desired.
  2. Spread the chicken and avocado mixture on one slice of bread.
  3. Sprinkle shredded cheese over the mixture and top with the second slice of bread.
  4. Heat a skillet over medium heat and melt a thin layer of butter.
  5. Grill the sandwich for 2 to 3 minutes on each side until golden brown and cheese is melted.
