Ingredients
- 2 pounds russet or Yukon gold potatoes, cut into bite-sized pieces
- 14 ounces smoked sausage, cut into rounds
- 1 ounce ranch seasoning mix
- 2 cups shredded cheese (cheddar and Monterey Jack blend)
- 1 cup sour cream
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss together the chopped potatoes and sliced sausage.
- Sprinkle the ranch seasoning over the mixture and toss again to coat evenly.
- Spread the mixture onto a baking sheet in a single layer.
- Bake for 25-30 minutes or until the potatoes are fork-tender and nicely browned.
- Stir in the shredded cheese and sour cream until well mixed, then return to the oven for another 5-10 minutes until the cheese is melted and bubbly.
- Let cool slightly before serving to allow the flavors to settle.
