Ingredients

  • 4 chicken breasts
  • 1 cup mushrooms, chopped
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1 cup shredded cheese (mozzarella or cheddar)
  • Salt and pepper to taste
  • 1 teaspoon dried thyme or Italian seasoning


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, melt 2 tablespoons of butter. Sauté the chopped mushrooms and garlic until tender. Season with salt, pepper, and thyme.
  3. Carefully cut a pocket into each chicken breast and fill with the mushroom mixture.
  4. In the same skillet, melt the remaining butter and sear the stuffed chicken breasts on each side until golden brown, about 4-5 minutes.
  5. Transfer the chicken to a baking dish, top with shredded cheese, and bake for 20-25 minutes until cooked through (internal temperature should be 165°F or 75°C).
  6. Let the chicken rest for a few minutes before serving.

Notes
