Ingredients
- 4 chicken breasts
- 1 cup mushrooms, chopped
- 4 tablespoons butter
- 4 cloves garlic, minced
- 1 cup shredded cheese (mozzarella or cheddar)
- Salt and pepper to taste
- 1 teaspoon dried thyme or Italian seasoning
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, melt 2 tablespoons of butter. Sauté the chopped mushrooms and garlic until tender. Season with salt, pepper, and thyme.
- Carefully cut a pocket into each chicken breast and fill with the mushroom mixture.
- In the same skillet, melt the remaining butter and sear the stuffed chicken breasts on each side until golden brown, about 4-5 minutes.
- Transfer the chicken to a baking dish, top with shredded cheese, and bake for 20-25 minutes until cooked through (internal temperature should be 165°F or 75°C).
- Let the chicken rest for a few minutes before serving.
Notes
For variations, try using spinach and ricotta for a different filling or add pesto for extra flavor. Serve with mashed potatoes or a fresh salad.
