Ingredients
- 4 boneless, skinless chicken breasts
- 2 bell peppers (any color, thinly sliced)
- 1 small onion (thinly sliced, optional)
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup shredded mozzarella cheese (or a mozzarella-cheddar blend)
- 1/4 cup grated Parmesan cheese
- Fresh parsley (for garnish)
Instructions
- Preheat your oven to 400°F (200°C) and lightly grease a baking dish.
- Place the chicken breasts in the dish and drizzle with 1 tablespoon of olive oil. Sprinkle with Italian seasoning, garlic powder, paprika, salt, and pepper; rub the seasoning evenly over both sides.
- Toss the sliced peppers and onions (if using) with the remaining tablespoon of olive oil. Arrange them around and over the chicken.
- Bake uncovered for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- Sprinkle mozzarella and Parmesan cheese over the chicken and peppers. Return to the oven for an additional 3-5 minutes, until the cheese is melted and bubbly.
- Garnish with fresh parsley and serve hot.
Notes
For added flavor, consider marinating the chicken before cooking. You can also try different cheeses or add more vegetables to the dish.
