Cheddar and Herb Soda Bread

Description

A fast and flavorful soda bread with sharp cheddar and fresh herbs, perfect for brunch or as a side.


Ingredients

  • 4 cups all-purpose flour (plus extra as needed)
  • 1 ½ tsp baking soda
  • 1 tsp salt
  • 2 tbsp chopped fresh chives
  • 1 tbsp chopped fresh thyme
  • 1 tbsp chopped fresh rosemary
  • 1 tbsp chopped fresh sage
  • 1 cup shredded cheddar cheese
  • 1 ¾ cups buttermilk (or quick substitute)


Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large mixing bowl, combine flour, baking soda, and salt.
  3. Add herbs and cheese to the dry mix and stir.
  4. Pour in the buttermilk and mix until a shaggy dough forms.
  5. Turn the dough onto a floured surface and gently knead to form a ball.
  6. Shape the dough into a 7-inch circle about 1½ inches thick.
  7. Transfer to a floured baking sheet and score a cross on top.
  8. Bake for 15 minutes at 425°F, then reduce to 375°F and bake for another 30–35 minutes.
  9. Remove from the oven and wrap in a tea towel to cool.
  10. Slice and enjoy warm or at room temperature.

Notes

Use fresh herbs for the best flavor. Grating your own cheese yields better melting.
