A vibrant and crunchy salad that balances sweet apples and mandarin segments with earthiness from grated carrots and a silky vanilla-yogurt dressing.
Ingredients
- 2 medium carrots, grated
- 1 red apple, sliced
- 1 green apple, sliced
- 1 cup dried cranberries
- 1 cup mandarin orange segments
- 1/2 cup vanilla yogurt
- 1/4 cup mayonnaise
- Salt and pepper to taste
Instructions
- Place the grated carrots into a large mixing bowl.
- Add the sliced red and green apples.
- Scatter the dried cranberries and mandarin orange segments over the top.
- In a small bowl, whisk together the vanilla yogurt and mayonnaise until smooth.
- Pour the dressing evenly over the salad.
- Toss gently with a large spoon until everything is coated.
- Taste and season with salt and pepper.
- Transfer to the fridge and chill for at least 15 minutes before serving.
Notes
Use plain or Greek yogurt if you prefer tang over vanilla; swap mayo for Greek yogurt to cut fat. Toss apple slices with a squeeze of lemon to slow browning.
