Oven-roasted chicken thighs coated in sweet BBQ sauce, caramelized to perfection for a flavor-packed dish.


Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 2 tablespoons avocado oil (can substitute with olive or vegetable oil)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried mustard
  • 1 cup BBQ sauce, plus more for serving


Instructions

  1. Add the chicken thighs to a large sealable container. Pour in the avocado oil, salt, black pepper, garlic powder, onion powder, smoked paprika, and dried mustard. Toss until thoroughly coated and marinate in the refrigerator for at least one hour or overnight.
  2. Preheat your oven to 425°F and line a baking sheet with parchment paper, aluminum foil, or a silicone mat.
  3. Add 1/4 cup of the BBQ sauce to the marinated chicken and toss to coat evenly.
  4. Transfer the chicken thighs to the prepared baking sheet and bake for 15 minutes.
  5. Remove the baking sheet from the oven, flip the chicken thighs, and brush each one with reserved BBQ sauce. Bake for an additional 10 minutes.
  6. Increase the oven temperature to broil, flip the chicken again, and brush with more BBQ sauce. Broil for 5-6 minutes until crispy and cooked through.
  7. Serve immediately with extra BBQ sauce on the side.

Notes

Marinating overnight enhances flavor. Always check the internal temperature of the chicken to ensure it’s cooked through.
