Ingredients
- 1 lb Andouille sausage
- 4 medium potatoes, diced
- 1 cup chopped onion
- 1 cup chopped bell pepper
- 1 cup chopped celery
- 3 cloves minced garlic
- 2 tsp Cajun spices
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
Instructions
- Heat a large pot over medium heat and add the Andouille sausage, cooking until browned.
- Add chopped onions, bell peppers, celery, and garlic; sauté until softened.
- Stir in Cajun spices and let bloom for a minute.
- Add diced potatoes and chicken broth; bring to a boil.
- Reduce heat and simmer until potatoes are fork-tender.
- Stir in heavy cream and cheddar cheese until melted.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh green onions if desired.
Notes
For a vegan version, substitute sausage with a plant-based alternative and use coconut cream.
