Description

A comforting and rich soup that combines hearty potatoes, creamy goodness, and a spicy Cajun kick.


Ingredients

  • 1 lb Andouille sausage
  • 4 medium potatoes, diced
  • 1 cup chopped onion
  • 1 cup chopped bell pepper
  • 1 cup chopped celery
  • 3 cloves minced garlic
  • 2 tsp Cajun spices
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste


Instructions

  1. Heat a large pot over medium heat and add the Andouille sausage, cooking until browned.
  2. Add chopped onions, bell peppers, celery, and garlic; sauté until softened.
  3. Stir in Cajun spices and let bloom for a minute.
  4. Add diced potatoes and chicken broth; bring to a boil.
  5. Reduce heat and simmer until potatoes are fork-tender.
  6. Stir in heavy cream and cheddar cheese until melted.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with fresh green onions if desired.

Notes

For a vegan version, substitute sausage with a plant-based alternative and use coconut cream.
