Description

A comforting and nutritious pasta dish loaded with vibrant broccoli and tender chicken, perfect for any night of the week.


Ingredients

  • Pasta (penne or fusilli)
  • 1 lb boneless, skinless chicken breast
  • 2 cups fresh broccoli
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste


Instructions

  1. Cook pasta according to package instructions until al dente. Drain and set aside.
  2. In a large sauté pan, heat 1 tablespoon of olive oil over medium heat. Add diced chicken breast and season with salt and pepper. Cook for about 5-7 minutes or until golden and thoroughly cooked.
  3. Stir in minced garlic, and cook for an additional minute.
  4. Add fresh broccoli to the pan and cook for another 3-4 minutes until tender but still vibrant.
  5. Gently toss in the cooked pasta and a drizzle of olive oil, mixing until everything is well-combined. Adjust seasoning to taste.

Notes

For a vegetarian version, substitute chicken with tofu and broccoli with seasonal vegetables. Serve with grated Parmesan cheese or red pepper flakes for extra flavor.
