A comforting and nutritious pasta dish loaded with vibrant broccoli and tender chicken, perfect for any night of the week.
Ingredients
- Pasta (penne or fusilli)
- 1 lb boneless, skinless chicken breast
- 2 cups fresh broccoli
- 2 tbsp olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions until al dente. Drain and set aside.
- In a large sauté pan, heat 1 tablespoon of olive oil over medium heat. Add diced chicken breast and season with salt and pepper. Cook for about 5-7 minutes or until golden and thoroughly cooked.
- Stir in minced garlic, and cook for an additional minute.
- Add fresh broccoli to the pan and cook for another 3-4 minutes until tender but still vibrant.
- Gently toss in the cooked pasta and a drizzle of olive oil, mixing until everything is well-combined. Adjust seasoning to taste.
Notes
For a vegetarian version, substitute chicken with tofu and broccoli with seasonal vegetables. Serve with grated Parmesan cheese or red pepper flakes for extra flavor.
