A comforting and nutritious baked dish combining cottage cheese, sweet blueberries, and oats, perfect for breakfast or brunch.
Ingredients
- 2 cups low-fat cottage cheese
- 1 1/2 cups blueberries (fresh or frozen)
- 1/2 cup almond milk (or any milk of choice)
- 2 large eggs
- 1/2 cup rolled oats
- 1/4 cup honey or maple syrup
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 1 tsp vanilla extract
- 1 tbsp chia seeds
- 1/4 cup nuts (chopped; walnuts or almonds preferred)
- Cooking spray or butter for greasing the dish
Instructions
- Preheat your oven to 350°F (175°C). Grease a baking dish with cooking spray or butter.
- In a large bowl, whisk the eggs lightly, then add the cottage cheese, almond milk, honey or maple syrup, and vanilla. Stir until mostly smooth.
- Add the rolled oats, chia seeds, cinnamon, and salt. Mix until combined.
- Gently fold in the blueberries and chopped nuts.
- Pour the mixture into the prepared baking dish and spread it evenly.
- Bake for 45–50 minutes until the top is golden and the center is set.
- Remove from the oven and let cool for 5–10 minutes before slicing into squares. Serve warm or at room temperature.
Notes
For a thinner custard, use whole milk. For nut-free, replace nuts with pumpkin seeds.
