Ingredients

  • 1 lb kielbasa sausage, sliced
  • 1 lb cheese tortellini (fresh or frozen)
  • 2 cups bell peppers, diced
  • 1 cup red onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish
  • Grated Parmesan cheese for serving (optional)


Instructions

  1. Preheat your Blackstone grill to medium-high heat for about 5 minutes.
  2. While the grill is heating, bring a pot of salted water to a boil and cook the tortellini according to package instructions (3-5 minutes). Drain and set aside.
  3. In a mixing bowl, combine bell peppers, red onion, garlic, olive oil, Italian seasoning, smoked paprika, salt, and pepper. Toss until coated.
  4. Add sliced kielbasa to the grill and sear for 3-4 minutes until browned.
  5. Push the kielbasa to one side of the grill and add the seasoned vegetables to the other side. Grill for 5-7 minutes until tender and slightly charred.
  6. Combine the drained tortellini with the kielbasa and vegetables on the grill, gently tossing together for 2-3 minutes to heat through.
  7. Adjust seasoning as needed, then remove from grill. Garnish with fresh parsley and serve immediately, optionally topping with grated Parmesan cheese.

Notes

For variations, consider adding zucchini or mushrooms as vegetables. This dish can be served with garlic bread or a garden salad.
