Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons Cajun seasoning
  • 8 ounces egg noodles
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 1 cup sour cream
  • 1 cup chicken broth
  • Salt and pepper to taste
  • Chopped parsley for garnish


Instructions

  1. Cook the egg noodles according to package instructions; drain and set aside.
  2. Toss the shrimp with Cajun seasoning until well coated.
  3. Heat the olive oil in a skillet over medium-high heat, add the seasoned shrimp, and cook until blackened, about 2-3 minutes per side. Remove and set aside.
  4. Add the diced onion and garlic to the skillet; sauté until softened, about 2 minutes.
  5. Stir in the sliced mushrooms and cook until tender, about 3-4 minutes.
  6. Pour in the chicken broth and bring to a simmer. Reduce heat, then mix in the sour cream until smooth.
