Ingredients
- 1 pound shrimp, peeled and deveined
- 2 tablespoons Cajun seasoning
- 8 ounces egg noodles
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup mushrooms, sliced
- 1 cup sour cream
- 1 cup chicken broth
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Cook the egg noodles according to package instructions; drain and set aside.
- Toss the shrimp with Cajun seasoning until well coated.
- Heat the olive oil in a skillet over medium-high heat, add the seasoned shrimp, and cook until blackened, about 2-3 minutes per side. Remove and set aside.
- Add the diced onion and garlic to the skillet; sauté until softened, about 2 minutes.
- Stir in the sliced mushrooms and cook until tender, about 3-4 minutes.
- Pour in the chicken broth and bring to a simmer. Reduce heat, then mix in the sour cream until smooth.
- Return the blackened shrimp to the skillet, seasoning with salt and pepper.
- Toss the cooked egg noodles in the skillet with the shrimp sauce, garnish with chopped parsley, and serve.
