Description

A colorful and filling cheese tortellini salad with crisp veggies, briny olives, and tangy Italian dressing, perfect for potlucks and meal prep.


Ingredients

  • 12 oz cheese tortellini
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 red onion, diced
  • 1/2 bell pepper, diced
  • 1/2 cup black olives, sliced
  • 1/4 cup fresh basil, chopped
  • 1/2 cup Italian dressing
  • Salt and pepper to taste


Instructions

  1. Bring a large pot of salted water to a boil and cook the cheese tortellini according to package directions. Drain well and spread on a tray or bowl to cool slightly.
  2. In a large mixing bowl, add the cooled tortellini and toss in halved cherry tomatoes, diced cucumber, diced red onion, diced bell pepper, sliced black olives, and chopped fresh basil.
  3. Pour the Italian dressing over the salad and fold gently until everything is evenly coated.
  4. Taste and season with salt and freshly ground black pepper to your preference.
  5. Cover and chill in the refrigerator for at least 30 minutes before serving.

Notes

For a lighter option, use a vinaigrette or a reduced-fat Italian dressing. Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
