Ingredients
- 1 prime rib roast (about 5-7 pounds)
- 2 tablespoons olive oil
- 2 tablespoons kosher salt
- 1 tablespoon black pepper
- 4 cloves garlic, minced
- 2 teaspoons fresh rosemary, chopped
- 2 teaspoons fresh thyme, chopped
- 1 cup beef broth
Instructions
- Preheat your oven to 450°F (232°C).
- In a small bowl, combine olive oil, kosher salt, black pepper, minced garlic, chopped rosemary, and thyme to create a seasoning rub.
- Generously rub this mixture all over the prime rib roast, ensuring it’s well coated.
- Place the roast bone-side down in a roasting pan to stabilize it during cooking.
- Roast in the preheated oven for 15 minutes to develop a lovely crust.
- After 15 minutes, reduce the temperature to 325°F (163°C) and continue roasting for about 90 to 120 minutes, or until it reaches your desired level of doneness (use a meat thermometer for best results: 130°F for medium-rare).
- Once done, remove the roast from the oven, cover it loosely with foil, and let it rest for 20-30 minutes to help the juices redistribute.
- Meanwhile, prepare a delicious gravy by adding beef broth to the pan drippings and letting it simmer on the stove.
- Finally, slice the roast and serve it alongside the rich gravy.
