A hearty and quick one-pan dish capturing the vibrant flavors of classic tacos.
Ingredients
- 1 lb Ground Beef
- 1 Onion, diced
- 2 cloves Garlic, minced
- 1 Bell Pepper, diced
- 1 can Black Beans, drained and rinsed
- 1 cup Corn (fresh or frozen)
- 1 packet Taco Seasoning
- 1 cup Salsa
- 2 cups Shredded Cheese (cheddar or Mexican blend)
- Salt and Pepper, to taste
- Tortilla Chips, for serving
- Cilantro, for garnish (optional)
Instructions
- In a large skillet over medium heat, add ground beef and cook until browned, breaking it apart with a spatula.
- Drain excess fat, then add diced onion, minced garlic, and bell pepper. Sauté until vegetables soften, about 3-4 minutes.
- Mix in black beans, corn, taco seasoning, and salsa. Stir well and let simmer for about 5 minutes.
- Reduce heat, sprinkle shredded cheese over the top, and cover the skillet to melt the cheese, which will take a couple of minutes.
- Serve hot with crunchy tortilla chips, and sprinkle fresh cilantro on top if desired.
Notes
For a healthier version, substitute ground turkey or chicken for beef. Use pre-chopped veggies to save time.
