Description

A hearty and quick one-pan dish capturing the vibrant flavors of classic tacos.


Ingredients

  • 1 lb Ground Beef
  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • 1 Bell Pepper, diced
  • 1 can Black Beans, drained and rinsed
  • 1 cup Corn (fresh or frozen)
  • 1 packet Taco Seasoning
  • 1 cup Salsa
  • 2 cups Shredded Cheese (cheddar or Mexican blend)
  • Salt and Pepper, to taste
  • Tortilla Chips, for serving
  • Cilantro, for garnish (optional)


Instructions

  1. In a large skillet over medium heat, add ground beef and cook until browned, breaking it apart with a spatula.
  2. Drain excess fat, then add diced onion, minced garlic, and bell pepper. Sauté until vegetables soften, about 3-4 minutes.
  3. Mix in black beans, corn, taco seasoning, and salsa. Stir well and let simmer for about 5 minutes.
  4. Reduce heat, sprinkle shredded cheese over the top, and cover the skillet to melt the cheese, which will take a couple of minutes.
  5. Serve hot with crunchy tortilla chips, and sprinkle fresh cilantro on top if desired.

Notes

For a healthier version, substitute ground turkey or chicken for beef. Use pre-chopped veggies to save time.
