Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 carrots, diced
- 1 bell pepper, diced
- 2 cans (15 oz each) black beans, rinsed and drained
- 1 can (15 oz) diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onions and sauté until translucent.
- Stir in the minced garlic, carrots, and bell pepper. Cook for about 5 minutes until softened.
- Add the black beans, diced tomatoes, vegetable broth, cumin, chili powder, salt, and pepper. Stir well to combine.
- Bring the mixture to a boil, then reduce heat and let simmer for 20 minutes.
- Adjust seasoning if needed, and serve hot, garnished with fresh cilantro.
