Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 1 bell pepper, diced
  • 2 cans (15 oz each) black beans, rinsed and drained
  • 1 can (15 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro, for garnish


Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onions and sauté until translucent.
  2. Stir in the minced garlic, carrots, and bell pepper. Cook for about 5 minutes until softened.
  3. Add the black beans, diced tomatoes, vegetable broth, cumin, chili powder, salt, and pepper. Stir well to combine.
  4. Bring the mixture to a boil, then reduce heat and let simmer for 20 minutes.
  5. Adjust seasoning if needed, and serve hot, garnished with fresh cilantro.
