Description

A vibrant bowl featuring crunchy vegetables, succulent chicken, and a creamy, spicy sauce that’s perfect for weeknight dinners.

Ingredients

  • 1 lb chicken breast, diced
  • 2 cups mixed vegetables (e.g., bell peppers, broccoli, carrots)
  • 1/2 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha (adjust for spiciness)
  • 2 cups cooked rice or quinoa
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. In a bowl, mix together the mayonnaise, sweet chili sauce, and sriracha. Set aside.
  2. In a skillet over medium heat, cook the diced chicken until golden brown and cooked through, about 5-7 minutes. Season with salt and pepper.
  3. Toss in mixed vegetables and sauté until tender, about 3-4 minutes.
  4. Stir in the Bang Bang sauce and cook for an additional minute.
  5. Serve the chicken and veggie mixture over cooked rice or quinoa, garnished with green onions.

Notes

For extra flavor, marinate the chicken in a bit of the Bang Bang sauce for 15-30 minutes before cooking. You can also use Greek yogurt instead of mayonnaise for a lighter twist.
