A vibrant bowl featuring crunchy vegetables, succulent chicken, and a creamy, spicy sauce that’s perfect for weeknight dinners.
Ingredients
- 1 lb chicken breast, diced
- 2 cups mixed vegetables (e.g., bell peppers, broccoli, carrots)
- 1/2 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon sriracha (adjust for spiciness)
- 2 cups cooked rice or quinoa
- Salt and pepper to taste
- Green onions for garnish
Instructions
- In a bowl, mix together the mayonnaise, sweet chili sauce, and sriracha. Set aside.
- In a skillet over medium heat, cook the diced chicken until golden brown and cooked through, about 5-7 minutes. Season with salt and pepper.
- Toss in mixed vegetables and sauté until tender, about 3-4 minutes.
- Stir in the Bang Bang sauce and cook for an additional minute.
- Serve the chicken and veggie mixture over cooked rice or quinoa, garnished with green onions.
Notes
For extra flavor, marinate the chicken in a bit of the Bang Bang sauce for 15-30 minutes before cooking. You can also use Greek yogurt instead of mayonnaise for a lighter twist.
