Ingredients
- 2 ripe bananas, mashed
- 2 cups rolled oats
- 1/2 teaspoon cinnamon
- 1/4 cup honey or maple syrup
- 1/4 cup nut butter (optional)
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- Pinch of salt
Instructions
- Preheat oven to 350°F (175°C) and line a baking dish with parchment paper.
- In a large bowl, mix mashed bananas, honey (or maple syrup), nut butter, and vanilla extract until smooth.
- Add rolled oats, cinnamon, baking powder, and a pinch of salt; stir until well combined.
- Pour the mixture into the prepared baking dish, spreading evenly.
- Bake for 20-25 minutes, until edges are golden brown.
- Allow to cool before cutting into bars.
Notes
Store in an airtight container in the fridge for up to a week. Freeze for longer storage.
