Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2-3 cloves garlic, minced
  • 1/2 pound Italian sausage (optional)
  • 2 sweet potatoes, diced
  • 6 cups chicken or vegetable broth
  • 1 package (about 9 oz) three-cheese tortellini
  • 2 cups baby spinach
  • 1/2 cup heavy cream
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onions and minced garlic, sautéing until fragrant, about 2-3 minutes.
  3. If using, crumble in the Italian sausage and cook until browned, stirring occasionally.
  4. Stir in the diced sweet potatoes and pour in the broth. Bring the mixture to a boil.
  5. Once boiling, reduce the heat and let it simmer for about 15 minutes, or until the sweet potatoes are tender.
  6. Add the tortellini and spinach; cook until the tortellini is tender and the spinach is wilted, around 5-7 minutes.
  7. Stir in the cream and season with salt and pepper to taste.
  8. Serve hot and enjoy the comforting flavors!

Notes

For added flavor, consider adding a bay leaf during the simmering stage. Leftovers can be stored in an airtight container for up to three days.
