Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2-3 cloves garlic, minced
- 1/2 pound Italian sausage (optional)
- 2 sweet potatoes, diced
- 6 cups chicken or vegetable broth
- 1 package (about 9 oz) three-cheese tortellini
- 2 cups baby spinach
- 1/2 cup heavy cream
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the chopped onions and minced garlic, sautéing until fragrant, about 2-3 minutes.
- If using, crumble in the Italian sausage and cook until browned, stirring occasionally.
- Stir in the diced sweet potatoes and pour in the broth. Bring the mixture to a boil.
- Once boiling, reduce the heat and let it simmer for about 15 minutes, or until the sweet potatoes are tender.
- Add the tortellini and spinach; cook until the tortellini is tender and the spinach is wilted, around 5-7 minutes.
- Stir in the cream and season with salt and pepper to taste.
- Serve hot and enjoy the comforting flavors!
Notes
For added flavor, consider adding a bay leaf during the simmering stage. Leftovers can be stored in an airtight container for up to three days.
