Delicious mini bites combining creamy cheesecake and spiced apple crisp, perfect for gatherings and easy to make.
Ingredients
- 1 cup graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup butter, melted
- 2 cups cream cheese, softened
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 2 cups apples, peeled and diced
- 1 teaspoon cinnamon
- 1 cup oats
- 1/2 cup brown sugar
- 1/4 cup flour
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine graham cracker crumbs, 1/4 cup of sugar, and melted butter. Mix well, then press firmly into the bottom of a mini muffin pan to create the crust.
- In a separate bowl, beat the softened cream cheese with 1 cup of sugar until smooth and creamy. Add the eggs one at a time, mixing well after each addition, and stir in the vanilla extract.
- Spoon the cream cheese mixture generously over the graham cracker crusts.
- In another bowl, mix the diced apples with cinnamon, oats, brown sugar, and flour until the apples are coated evenly.
- Evenly distribute the apple mixture over the cream cheese layer.
- Place the muffin pan in the preheated oven and bake for about 15-20 minutes, or until the cheesecakes are set and slightly golden.
- Remove from the oven, allow to cool for a few minutes, and serve these delightful bites as an easy and delicious dessert.
