Description

A comforting and nutritious chicken and vegetable soup that’s perfect for busy parents preparing for a new baby.


Ingredients

  • Skinless chicken breasts or thighs
  • Carrots
  • Celery
  • Green beans
  • Garlic
  • Onion
  • Chicken broth or vegetable broth
  • Fresh or dried thyme
  • Fresh or dried parsley
  • Salt and pepper to taste
  • Olive oil


Instructions

  1. Heat a large pot over medium heat and add a splash of olive oil.
  2. Toss in the chopped onions and minced garlic; sauté until translucent.
  3. Add bite-sized pieces of chicken and cook until no longer pink.
  4. Stir in your chosen vegetables and sauté for another 5 minutes.
  5. Pour in the broth and bring to a gentle boil.
  6. Lower the heat and let it simmer for 20-30 minutes.
  7. Season with herbs, salt, and pepper to taste.

Notes

This soup can be enjoyed on its own or paired with crusty bread or salad. It freezes well for up to 3 months.
