Ingredients
- Skinless chicken breasts or thighs
- Carrots
- Celery
- Green beans
- Garlic
- Onion
- Chicken broth or vegetable broth
- Fresh or dried thyme
- Fresh or dried parsley
- Salt and pepper to taste
- Olive oil
Instructions
- Heat a large pot over medium heat and add a splash of olive oil.
- Toss in the chopped onions and minced garlic; sauté until translucent.
- Add bite-sized pieces of chicken and cook until no longer pink.
- Stir in your chosen vegetables and sauté for another 5 minutes.
- Pour in the broth and bring to a gentle boil.
- Lower the heat and let it simmer for 20-30 minutes.
- Season with herbs, salt, and pepper to taste.
